It’s plum season and I am seeing all kinds of plum cakes posted everywhere! They show beautifully royal colors, which I love and which make my mouth water. Funny enough though, I have never tried to bake one! It’s 2015. And it’s time for me to make my first Plum Upside-Down Cake, guys. I found what looked like a good recipe online, and made a few little tweaks to it, like I usually do. I am passing it along just as I made it, because it turned out super tasty, and will be a perfect snack when Jacob comes home in a day or so.
Plum Upside-Down Cake
9 TBSP unsalted butter
1/2 cup plus 2 Tbsp brown sugar
1/3 cup white sugar
4 red plums (I only had 3, but wish I would have had one more just for the plum pattern on the top.)
1 large egg
1/2 cup greek yogurt
1 cup all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1-1/2 tsp pumpkin pie spice
Preheat oven to 325 degrees fahrenheit. Put 3 Tbsp of the butter in a cast iron skillet (or 8 inch round cake pan), and place in the oven to melt the butter and heat the skillet.
While the oven is heating up, slice the plums into semi-thin rounds. Soften 6 Tbsp of the butter in the microwave or on the stove, making sure it is not too hot so that it won’t cook the egg you are about to mix it with, and pour it into a mixing bowl. Add 2 Tbsp of brown sugar, 1/3 cup of white sugar, and the egg and mix it together well. Add the yogurt and mix it in.
Take the hot, buttered skillet out of the oven before the butter browns too much, and sprinkle 1/2 cup of brown sugar evenly over the butter. Arrange the plums on top of the brown sugar in a pretty design.
In another bowl, whisk together the flour, baking soda, salt and pumpkin pie spice. Add a little at a time to the wet ingredients and mix til a thick batter forms.
Pour the batter over the plums, make sure the batter is spread as close to the edges as you can get it.
Put it in the oven and bake it for 45-50 minutes. Once it’s done, take it out, let it cool a little bit and then carefully turn the cake out of the skillet onto a serving plate.
Admire the beauty. Slice and eat!!!
