For a few years now Jacob has had a reputation for making great salsa, and he has just stepped it up a notch recently, adding chipotle peppers! We love the smoky flavor, and he always makes it when we have Street Tacos, or sometimes just when we need a good appetizer or snack. It’s my favorite. Besides his Lamb Spaghetti Sauce, but I will post that another time. 🙂 He really is a good cook, and just doesn’t know it.
Here is the recipe for his salsa:
Jacob’s Chipotle Salsa
Makes about a pint.
1 can 15 oz Hunts fire roasted tomatoes
1/2 to 1 jalapeño, unseeded
3 chipotle peppers with adobe sauce (find them canned in the latin food section at the market.)
1/4 yellow onion
1 garlic clove
small handful of cilantro
1/2 a lime
1 tsp salt
1 tsp black pepper
Pour the can of tomatoes, with the juice, into a blender. Add the onion, garlic, jalapeño and chipotle.
Put blender on pulse mode, then blend in “chop” mode. Add salt, pepper, and squeeze the lime juice from 1/2 a lime into the salsa. Pulse a few more times til it is blended in. Stir a little bit with a spoon.
Pour it into a bowl alongside some corn chips and dive in!
