My sister-in-law, AmiBeth, is a fantastic cook. She always brushes the compliments off like it’s nothing, but let me tell you. This girl has got some amazing kitchen skills!
Last Christmas we were all together for the obligatory (oh, who are we kidding? I would swoon over it even if it weren’t obligatory. But it is. 🙂 ) holiday feasting. She made this amazing salad that I could binge eat for days. And the great part is that because it’s kale, and kale is such a sturdy leaf, it keeps in the fridge for a few days, so you CAN binge eat on it for days!
I make this whenever I am home and wanting to eat lightly and deliciously for the week, OR when I just have a kale craving. Because that is definitely real once you’ve had this salad!
Okay. Here you go. Prepare to binge.
AmiBeth’s Binge-able Kale Salad
makes 6 cups
For the dressing:
1/2 cup peanut oil
2 Tbsp sesame oil
2 Tbsp apple cider vinegar
1-1/2 Tbsp honey
1 Tbsp soy sauce (lite)
dash of red pepper flakes
Blend in a blender on high for about 30 seconds. Set aside.
For the salad:
7 cups chopped kale
2 cups shredded cabbage
1/2 cup chopped mint
1/2 cup chopped cilantro
1 small shallot, sliced finely (or 3 green onions)
Drizzle the dressing over it all, and toss it.
Let it set for about 30 minutes, to let the dressing wilt the kale a little bit. Serve it up in a bowl, and sprinkle some sunflower seeds or crushed peanuts on top!
I add chicken for protein sometimes, but this salad is so hearty that you don’t need much extra to fill you up. Keep any extra in a tupperware in the fridge for up to 3 days. It starts to wilt a little at the end, but is still yummy!!
